Bring on the Sun (and Wild Salmon)!

Not much revives the mind and spirit like a change of scenery, especially when that involves palm trees and crashing waves!  The past, almost, year has been challenging to say the least, so my family took the opportunity to do something most people cannot normally plan to do with an office job and kids in school...we flew away to Hawaii for two months!  With my daughter still on East Coast time doing remote school, and 2 weeks in, the hardest part has been dragging her from bad at 3:30 each weekday morning.  What it does provide is a few peaceful early morning hours to do some planning and organizing, then we have almost a full day to enjoy this amazing place...and, I don't have [...]

Tacos Por Favor!

We love tacos in my family... particularly Baja style, and either shrimp or fish are the go to.  Having spent so long in Southern California, we became pretty spoiled when it comes to Mexican food and it is not always easy to satisfy the craving here on the East Coast.  So, when I begin to daydream of the California sun, trips to Baja and snacking on fresh and authentic tacos under a palapa style roof, I will pull out this recipe for Grilled Shrimp Tacos...sometimes making my own corn tortillas to boot!   Grilled Lemon Shrimp Tacos w/ Cumin-Lime Cream and Avocado-Tomato Salsa Grilled Shrimp: 1 pound shelled shrimp Zest of 1 lemon 1/2 tablespoon olive oil 1/2 teaspoon sea salt 1/2 teaspoon black [...]

Spring into grillin’… Veggies!

Spring time in the North East is always a bit…unpredictable!  This year has been especially crazy with the constant up and down on the thermometer, but that has not put a chill into Spring fever…not today anyway!  We are finally having a more April-like day today, and I am thinking about the warmer days to, hopefully, come in the next months.  The change of seasons is always so exciting, especially food wise, and transitioning from Winter meal choices to warm weather food makes us all happy.  One cooking tool that always comes to mind about now is the grill, and it is time to dust mine off and bring it out of hibernation!  My menus have already begun to reflect the switch from slow [...]

Thinking’ about Thanksgiving!

It's never to early to start thinking about Thanksgiving!  After all, it is the only holiday we have that is focused completely on The Meal.  There is so much amazing food that is served around this country on Thanksgiving...the main event is usually a Turkey, but the rest of the table is up for grabs.  Here in New England, we get pretty specific about what should be included in a Thanksgiving meal, but that does not mean you can't elaborate a little to make that squash a little yummier, or the cranberries and little zippier.  The JAM kitchens are always buzzing this time of year thinking of ways to jazz up your table, so why not let us help you with the big event [...]

Sweet Summer!

I am in love with stone fruits of any kind...Peaches, Plums, Nectarines, cherries...especially the White Nectarines, which are like sweet little balls of sunshine!  I never really get sick of eating them and wish we could enjoy them for more of the year.  Since the season is short, I try to take advantage of the yummy goodness in as many ways I can.  An old, but delicious, standby for many fruits is, of course, pie, and one of my favorite summer pies is Blueberry- Peach.  Here is a recipe for Blueberry-Peach Hand Pies.  Make a bunch and keep them in the freezer for those nights when the when the vanilla ice cream gets lonely! Blueberry-Peach Hand Pie Crust: 2 cups All Purpose Flour 1/2 [...]
